Simple Trentino pergola training system, planted in the early 1980s. Soil composed of glacial deposits with sub-rounded polygenic pebbles in an abundant reddish silt-clay matrix. The Pinot Noir is harvested by hand at its peak ripeness. The Chardonnay is hand-picked from a single vineyard in the locality of ‘Costiöla’ at Mosana di Giovo in Valle di Cembra. The vineyard has a planting layout (200 cm x 50 cm) that allows a density of no less than 10,000 vines per hectare, following the example of Champagne vineyards. Soft pressing of the whole bunches at a temperature below 15°C with a maximum must yield of 55% vol/weight for the Chardonnay and 45% vol/weight for the Pinot Noir. Maturation of the sparkling wine base in stainless steel. Maturation sur lies for a very long time, in the cellar dug out of porphyry beneath the family home in Mosana di Giovo, bottles buried in porphyry sand. Time plays a key role in the evolution of this special sparkling wine and each bottle has its own different complexity.
