Ortrugo 97%, Sauvignon 3%
Soft pressing of the whole grapes, immediate separation of the skins, cold cleaning of the must, subsequent fermentation at 15°/18°C for 20 days. Refermentation and second fermentation in an autoclave at a controlled temperature of 18/20°C for 3 months with the Charmat method. Cold stabilization.
Straw yellow color with greenish reflections. Elegant, fine and floral nose. Dry, smooth and soft on the palate, with a light almond aftertaste.
Cured meats and cheeses, legume soups, fish soups, fish-based dishes.
