Separate vinification of the three grapes Chardonnay, Grechetto and Procanico. The grapes of each vine, before alcoholic fermentation, are subjected to a short cold maceration in a closed press to allow optimal extraction of the varietal aromas. The musts, after static decantation and regulation of the fine lees, are vinified in steel tanks at controlled temperatures, with the exception of a small percentage of the Grechetto must which ferments and ages in French oak barriques. The refinement on the fine lees lasts until bottling in June/July.
