Manual harvesting of the grapes and soft pressing without destemming, with approximately 2 hours of maceration in the press; spontaneous fermentation without the addition of yeasts or temperature control, for approximately 2 weeks; the wine matures in steel on the fine lees for 8/12 months depending on the vintage and refines for 4 months in the bottle.
Deep straw yellow colour; mineral and delicately aromatic nose, with notes of aromatic herbs, hay and light spices; fresh and crunchy, harmonious sip, with smoky hints.
Aperitif, raw fish, seafood appetizers, fresh cheeses.
