Description

The grapes are harvested overripe in 18kg boxes starting from the first week of October. The crushing, destemming and subsequent maceration of the skins takes place at a controlled temperature in the traditional way with repeated pumping over for 15 days. After 12 months of aging in Tava amphora, it is bottled and aged for a further 12 months.

Tasting

Intense ruby red colour; complex nose with notes of blackcurrant and cherry; intense and decisive sip, with a persistent tannic texture.

Pairings

Game and game, great mature cheeses, enjoyed alone at the end of the meal.
