“Pfaffe” Blanc de Blanc Dosaggio Zero 36 mesi

On Mount Celva, at 700m above sea level, an isolated vineyard of only Chardonnay dominates the valley. It is one of the oldest in the winery and rests on steeply sloping morainic land. The bunches are small, and the firm, compact and crunchy grapes are perfect mirrors of sunshine from which to obtain the power base with beautiful acidity and brilliant aromas. The refinement on the yeasts lasts at least 24 months, after which the bottles are riddled on the pupitres, and finally to the disgorgement, which occurs with simple topping up – without adding liqueur de expedition – and subsequent corking.

Deep straw yellow color with fine and persistent perlage; the nose has good complexity, the palate is straight and fresh. Structure and finesse.
