100% Piedirosso Campi Flegrei, also known as ‘per’e palummo’
Manual harvest in wicker containers with selection in the vineyard; the grapes are subjected to soft pressing and left to macerate with the skins for four or five days at a controlled temperature; we then proceed with the drawing off and pressing of the skins; fermentation takes place at a controlled temperature and lasts about twenty days.
Ruby red color with purple reflections; characteristic nose of geranium and pepper, with notes of cherry and Mediterranean scrub; fresh and mineral on the palate, with a return of flowers and red fruits and good persistence.
Legume soups, stewed white meats, grilled meats, cured meats and cheeses.
