Once the alcoholic fermentation by selected yeasts is completed, the new wine is kept for a few weeks at a temperature of 18° to favor the completion of the malolactic fermentation. Spontaneous decantation follows with separation of the deposits and refinement in steel. In spring, just before bottling, a little wine that has been kept sweet is added; a new alcoholic fermentation is thus determined which enriches the wine with the typical bubbles making it a very pleasant and easy to drink product.
Bonarda Piemonte, vinified dry but with a slight liveliness due to the presence of carbon dioxide from fermentation, is characterized by its delicate aroma, with notes of blackberry and spices. The slight liveliness makes Bonarda even more pleasant on the palate, accentuating its freshness without diminishing its complexity.
