The harvest of the grapes takes place in the very early hours of the morning, in order to embed the fresh aromas while avoiding oxidation in the hottest hours. The grapes arriving in the cellar are destemmed and softly pressed; the must obtained is transferred to stainless steel tanks at a temperature of approximately 10°C to promote its natural clarification. Subsequently, part of the Chardonnay is transferred to French oak barriques, where alcoholic fermentation takes place followed by malolactic fermentation and refinement on its own yeasts. Fiano, like the remaining part of Chardonnay, is vinified in steel at a temperature of 16-18 °C in order to enhance its characteristic freshness. During the month of January the assembly takes place and the wine ages in steel for a few months before being bottled. Finally, further refinement in the bottle.
