From the uncontaminated nature of the island of Pantelleria, Marco de Bartoli was the first to understand the great potential of Zibibbo grapes grown in the most exposed areas to the North, in Contrada Cufurà and Contrada Ghirlanda, for the production of a dry white wine with a strong minerality, great intensity and complexity. The 60-year-old vines grow in the black volcanic soil on terraced slopes at an altitude of 200m. After harvesting, the bunches are selected, destemmed and delicately pressed to start a 24-hour maceration. The must obtained from a soft pressing is left to decant for 48 hours at a low temperature. The clarified part is fermented with indigenous yeasts in steel tanks at a controlled temperature. It then ages for nine months, always in steel.
