Manual harvest, vinification at low temperature for 20/30 days with delestage on the yeasts for 9/12 months and daily batonnage; the wine then ages in the bottle for 3 months.

Intense nose of tropical fruits and flowers; sip of great structure and minerality. Excellent aptitude for aging.

Land and sea appetizers, fish-based first courses, shellfish and grilled fish, medium-aged cheeses.
