Description

Manual harvesting at the end of August; extraction of the free-run juice only by soft pressing, alcoholic and malolactic fermentation in steel; re-fermentation in the bottle with permanence on the lees for at least 24 months before disgorging.

Tasting

Golden yellow in colour, fine and persistent perlage; nose of exotic fruit and pastries, with refreshing mineral notes; intense and savoury on the palate, with aromatic returns of ripe fruit and pastries.
