Pinot Noir (Clone 829)
The grapes are selected and harvested manually in 18kg boxes in the first weeks of September, they are then crushed, destemmed and left to ferment/macerate for approximately 8/10 days at a controlled temperature of 27°. After 12 months in tonneaux, it is bottled and aged for a further 12 months.
Pale ruby red colour; decidedly fruity and floral nose, with slight vinosity; intense and soft sip, which brings back small berries, currants, blackberries and blueberries.
Game, braised meats, fried fish, medium-aged cheeses.
