Manual harvest with selection in the vineyard, then directly in the drying room for drying for approximately 3 months; traditional vinification in steel on the skins, maturation in French oak barrels for at least 12 months, refinement in bottle.
Deep ruby red color tending towards garnet; nose of morello cherry, blackberry, raisins, elderberry; sweet and enveloping sip, slightly acidic and tannic.
Dark chocolate-based desserts, baked desserts, berry tarts, dry pastries, blue cheeses.
