Description

Manual harvest with selection in the vineyard; Crushing, destemming, maceration for 14 days with maximum temperature control at 32°C, racking once alcoholic fermentation is complete and subsequent placing in oak barrels in which malolactic fermentation begins and is completed; maturation for approximately 14 months in the same barrels.

Tasting

Intense aroma of spices and berries. The taste is full-bodied, structured and rather dry.

Game, mature cheeses, cured meats, grilled meats, roasts, well-seasoned pasta.
