Description

Spontaneous fermentation on the skins in oak conical vats for 60 to 90 days. After maceration, it is aged in 20 or 30 hl barrels for 3 years and refined in bottles for 1 year. Unfiltered.

Tasting

Bright amber colour. Very broad and complex nose of ripe peach, hazelnut, herbs and citrus peel. The sip is powerful, rich, lively, with an inexpressible persistence. Long ageing gives this wine even more complexity, gracefulness of sip and elegance.

Starters, seafood starters, stewed fish, fried vegetables and pulses, white meat, rabbit.
