100% Riesling Italico
Manual harvesting in boxes in October. Spontaneous fermentation in contact with the skins in 22Hl open vats, without temperature control, selected yeasts, enzymes or clarification. This is followed by decanting for a month in stainless steel tanks, then in 12Hl oak casks for at least a year. Maturation in glass for about 5 months.
Intense amber colour. The olfactory bouquet is complex with notes of ripe citrus fruits, hazelnuts, amaretto and minerals. The palate corresponds with intense hints of apple, mandarin, gentian, chalk, dried apricot and slightly savoury hints.
Excellent with fish dishes, white meats and mature cheeses.
