This one and a half hectare plot stands on calcareous soils and sandstone marl, with exposure to the East. Long pressing with whole grapes, fermentation in traditional vats with native yeasts. The refinement takes place in barrels (the same as the fermentation), on its lees until bottling in August of the following year.
The nose slowly reveals itself with aromas of hay, white fruit, peach and candied citrus. In the mouth it is tense, with vibrant and delicious acidity; a nice citrus finish.
Roast veal in sauce, escargots, smoked fish dishes, pickled vegetables, artichoke cream.
