RN Bombino Bianco Brut IGP, 2020

It is made exclusively from Bombino Bianco grapes, an indigenous Apulian grape variety that D’Araprì has been able to exploit as a base wine for classic method sparkling wine making. The first fermentation in wooden barrels gives the final sparkling wine a luminous gold colour and rich aromas of ripe fruit and vanilla. It stays on the lees in the bottle for at least 36 months, in the basement of the old winery. Dégorgement by hand “a la glace”, with addition of dosage liqueur.

Brilliant golden yellow colour with fine perlage. On the nose it is refined, buttery notes reminiscent of pastries, clean aromas of ripe yellow fruit and a spicy note of vanilla. Complex and structured palate, full, voluminous and full-bodied, a creamy and elegant bubble, long finish with continuous aromatic references.

It goes well with land or seafood hors d’oeuvres, white meats.
