19% of the Pinot Noir is vinified in red, using exclusively the wine obtained from maceration. Manual harvest and selection of grapes. 70% vintage wine and 30% 50 year reserve perpetuelle, 9 months maturation in vitrified concrete tanks, 3 years aging on the lees. Dosage: 7g/l.
Raspberry pink color with orange reflections, fine, creamy and persistent perlage. Fine and fruity aroma; together with a chalky minerality, citrus notes of lemon, fruity notes of black cherry, blackcurrant, raspberry and aromas of toasted bread are perceived; followed by spicy notes of licorice, black pepper, cloves. The sip fills the palate with a delicate taste of red and black fruits (raspberry, cherry, blackcurrant and blueberry). Everything is well balanced thanks to a beautiful freshness, supported by minerality. Long and elegant finish.
Champagne for the whole meal, ideal with shellfish and noble poultry.
