The grapes are selected for the first time by the harvesters in the vineyard; upon their arrival in the winery they are stored in a ventilated cold room for one night at 7°C, then processed at dawn the following day to fill the winemaking tanks with grapes at the same temperature; they thus go through a double sorting, first of the bunches and then of the berries. The vinification takes place in non-vitrified concrete tanks, with pumping over and pressing during the entire period of stay in the tank which can reach up to 30 days; racking and pressing of the pomace using a vertical press. This is followed by a 12-month maturation in large 25hl Slavonian oak barrels, in tonneaux and in first and second passage barriques.
