The grapes, harvested by hand and coming from different parcels, are vinified in separate temperature-controlled steel and concrete tanks. Malolactic fermentation takes place in barrels and maturation lasts 16 months, in barrels made half of new wood and half of second passage.
The color, dark burgundy, is sumptuous. The nose, powerful and deep, is initially dominated by woody notes of gingerbread, then intense aromas of ripe fruit appear. Focused on candied fruit and sweet spices, the palate is devilishly delicious, mellow, broad and dense, supported by a beautiful texture of fine tannins that suggest excellent development.
red meat stews, lamb, beef fillet with porcini mushrooms, tasty cheeses.
