Description

Manual harvest in boxes with selection in the vineyard; vinification in steel with cold maceration for 3/4 days and alcoholic fermentation for 7/8 days; the wine matures for a few months in small French oak barrels until bottling in April, and then refines in the bottle.

Tasting

Floral aromas of violet, dry sip of medium acidity, with good body, velvety, very rounded; the floral and liquorice notes are very persistent.

Pairings

Cold cuts and cheeses, mushroom risotto, first courses with meat sauces, stewed meats.
