The grapes (the Saperavi Budeshuri is a close cousin of the better known Saperavi) are destemmed and fermented in Qvevri with a 15-day maceration followed by 22 months of maturation, again in amphora.
Nose of black cherry, rose and hints of smoke; rich, juicy and velvety sip, with a finish that highlights the sweetness of the fruit and a hint of acidity. A cuvée that is not “extreme” to approach Georgian wine.
Fish soups, roasted or grilled white meats, spicy vegetarian dishes, mature cheeses.
