The grapes, harvested at dawn, are pressed whole, with the utmost delicacy. The free-run must is left to clarify with static decantation for 24 hours. Then follows the alcoholic fermentation which takes place 50% in egg-shaped concrete containers, exclusively dedicated to this wine, 10% in new barriques and the remaining 40% in second and third passage barriques and tonneaux. Here the Cicinis will refine, remaining on the lees for 9 months at low temperature and without carrying out malolactic fermentation, until bottling.
Straw yellow in colour, it immediately displays enveloping aromas of citrus fruits, papaya and sage. Followed by hints of vanilla, mocha and a crescendo of boxwood and jasmine. On the palate it enchants with the balance between the fresh acidity and the enveloping body. In the finish, hints of lime, white blackberry and the unmistakable savory sensation of the wines born in the Collio area of Gorizia emerge.
It pairs perfectly with dishes characterized by a good fat content such as pork (sausages, ribs) and legume soups without tomatoes, cream of mushrooms and chicken cooked in a pan with vegetables.
