Description

Manual harvest in the coolest hours of the day. Crushing-destemming, maceration at a temperature of 12/15°C for 12 hours and subsequent soft pressing, avoiding contact with oxygen as much as possible. After 24 hours, separation of the coarser lees and then fermentation at a controlled temperature at 18°C.

Tasting

Straw yellow in color with greenish reflections, it expresses an intense, characteristic, very powerful aroma with vegetal and medicinal herb notes combined with pleasant expressions of fresh fruit. In the mouth it does not betray expectations, manifesting itself with determination and elegance, with fullness and persistence.
