It comes from a selection of 100% Schiava Gentile grapes, from vineyards located high in the hills at about 400 meters above sea level. above sea level, near the Botticino marble quarries, following an exclusively manual harvest at the end of September. The must is cooled for about 30 hours, then the “coarse” dregs are removed. Draining of the must in the press for approximately 1 hour, until it reaches the “onion skin” tone, after which light pressing is done at 0.5 bar. The refinement takes place 2/3 in cement barrels and 1/3 in steel barrels, and the “fine lees” are constantly kept in motion; the batonnage lasts about 3 months, during which the barrels are kept outside so that the frost of the night makes the wine stable naturally.
