Manual harvesting in boxes with selection of the bunches of grapes, slightly dried on the vine; destemming and fermentation for about 18 days at a controlled temperature of 26/27°C, with frequent pumping over; part of the must is vinified white and reassembled at the end of fermentation; the wine then matures in 500-litre oak casks for 24 months and finally refined in the bottle.
Ruby red in colour; intense and elegant nose, with spicy notes of clove and pepper, together with hints of violets and red fruit; wonderfully fresh and full-bodied on the palate, with spicy returns on the finish.
First courses with meat sauces, braised meats, stews, roasts, game, mature cheeses.
