Description

Immediate destemming, soft pressing and cold decantation of the must; racking and fermentation in steel for 15 days at a controlled temperature; decanting into an autoclave for the second fermentation according to the Martinotti Method for approximately 60 days.

Tasting

Straw yellow color with greenish reflections, fine and persistent perlage; delicate and penetrating nose of white flowers and limoncella; refreshing and savory sip, balanced between softness and acidity.
