Production area: owned vineyards that extend for approximately 3 hectares in the municipality of Santa Giuletta. Altitude: 350 meters above sea level. Exposure: west. Soil characteristics: silty clayey calcareous soil. Training system: spurred cordon/guyot. Planting density: 6,000 vines per hectare. Production technique: the harvest is done by hand in 30kg boxes. The white vinification, with the soft pressing method, is followed by fermentation in steel at a controlled temperature. The draft of the cuvée follows in the spring following the harvest. We then move on to refinement for over 42 months with a residual sugar of less than 3glt.
