Manual harvest in boxes, destemming and pressing of the grapes, indigenous inoculation and fresh fermentation. Aging on the yeasts in winter and bottling on the fourth new moon of the year following the harvest. Further refinement for at least four months at 2000 meters at the foot of Monte Civetta in the heart of the Dolomites.
Straw yellow colour, it may be slightly hazy due to the presence of suspended yeasts. The nose is very delicate with floral and fruity hints of citrus and dehydrated apricot. In the mouth the bubble is light and delicate, the fruity notes return. Savory and dry on the finish.
