Vineyard of origin: The Chardonnay grapes were harvested from a single vineyard at ‘Costiöla’ in Mosana di Giovo in the Cembra Valley. The vineyard, planted in the early 1980s with Chardonnay for the production of a great wine, has a planting layout (200 cm x 50 cm) that allows a planting density of no less than 10,000 vines per hectare, following the example of Champagne vineyards. French clones and a very weak rootstock (41B) were used in order to limit production, guarantee vegetative balance and resist major water stress. The vine is trained using the classic Trentino simple pergola. The cultivation terrain is also unique, consisting of glacial deposits with sub-rounded polygenic pebbles in an abundant reddish silt-clay matrix. The grapes are harvested by hand after organoleptic tasting. Soft pressing of whole bunches at a temperature below 18°C, with a maximum must yield of 55% vol./weight. Maturation of the sparkling wine base in stainless steel. Maturation sur lies for 114 months in the underground cellar with seasonal temperature fluctuations from 12°C to 20°C.
