Manual harvest in boxes with selection in the vineyard in the second ten days of September; destemming, spontaneous fermentation with maceration on the skins for 25 days in medium-sized wooden vats, with immersion of the cap 4/5 times a day; the wine matures for 12 months in small and medium-sized wooden barrels; it is then assembled in 2500 liter barrels, where it settles without clarification or filtration, and continues its long maturation.

Intense and deep ruby ​​red colour; rich nose, of blueberry, raspberry and blackcurrant, with notes of violet and spices; enveloping and persistent sip, with well-present and integrated tannins.

First courses with game sauces, stewed red meats, mature cheeses.
