Manual harvest with selection in the vineyard; pre-fermentation maceration in the press for 16 hours at around 12°C, fermentation in wooden barrels, initially with indigenous yeasts followed then by a controlled inoculation; the wine matures for 6 months on the fine lees in steel with periodic batonnage, before bottling at the end of March.

Straw yellow colour; intense nose with aromas of peach and liquorice, rich and long sip.

Seafood appetizers, crustaceans and molluscs, vegetarian dishes, lightly matured cheeses.
