Description

The ripe grapes are only destemmed, then spontaneous fermentation follows for 15 days, malolactic immediately after and maturation in steel for a year; bottling according to the lunar calendar. No additions during the entire process except very low quantities of sulfur.

Tasting

The calcareous soils give a wine with very elegant and mineral scents, which stands out for its lively freshness and a taste rich in fruity aromas.
