Fermentation in 50 hl French oak barrels for 14 days. Maturation in 18 hl French oak barrels for at least 24 months. For this unique product, bottle aging in the cellars of Castello di Potentino lasts until Charlotte decides it is the right time to present it to the market; in any case, the refinement lasts a minimum of 36 months before being placed on the market. Vineyards cultivated in an extremely natural way, Native yeasts in the cellar, no fining, light and mechanical filtration, very little sulphur.
Delicate translucent ruby color. Intensely floral scent, with notes of violet and rose, sage, savory and wild mint. Dry, complex and extremely sublimated palate, with fine acidity like a net and subtle but resonant tannins.
Stews or steaks of beef, game, wild boar.
