BottlesIt was absolutely the first Sangiovese to see a barrique, the first to be blended with international varieties, and among the first Chianti Classico reds not to also use white grape varieties in the blend. Fermentation takes place in truncated cone tanks and the musts are left to macerate on the skins with extreme attention and constant monitoring. Once separated from the skins, the wine is placed in barriques, where it undergoes malolactic fermentation. Once this phase is also completed, the wine is decanted into French and Hungarian oak barrels, partly new and partly second passage, where it rests to mature for 14/16 months. The different lots, vinified separately based on the variety, are elevated in wood and then assembled a few months before bottling. The wine ages for a further 12 months in the bottle before being released on the market.
Very intense ruby red color. Rich and elegant nose of blackcurrant and blackberry, with hints of chocolate and liquorice. Full, enveloping and vibrant sip, with dense and silky tannins; great finesse and complexity, long persistence.
Ground first courses, grilled red meats, game, stews and braised meats.
