Manual harvest in boxes; soft pressing using only free-run must, fermentation and maturation in steel; left in the bottle on the lees for at least 24 months, disgorging a la volée, minimal addition of liqueur; further refinement in the bottle for at least 6 months before marketing.
Clear appearance, very fine and persistent perlage. Characteristic nose, with typical notes of Timorasso sparkling wine, hints of bread crust and mineral and floral perceptions with a light citrus note on the finish. Savory, mineral, fresh sip, with the characteristic acid note of Timorasso. Of great intensity, elegance and length.
Cured meats and mature or blue cheeses, fried seafood, shellfish.
