Montepulciano
Selected overripe grapes, harvested by hand and placed in small crates in the second ten days of October. Fermentation for 20/25 days at a controlled temperature of 22/28°C in French oak vats, with daily manual breaking of the cap; malolactic fermentation and elevation in mainly second passage French oak barriques for 18/24 months. Bottle refinement for 6 months.
Intense dark red color. Nose of ripe morello cherry or sour cherry (typical descriptor of the vine), little jam, undergrowth, mushrooms, leather, and hints of spices, roasted coffee, liquorice, smoke and tobacco. Good volume on the palate with soft evolved tannins and long persistence.
Braised and stewed meats, game and game, grilled red meats, mature cheeses.
