Vinification with brief maceration on the skins for a few days, spontaneous fermentation with indigenous yeasts and natural malolactic fermentation; maturation in underground qvevri, without fining or filtration.

A nose of dried chamomile flowers and exotic fruits, with notes of aromatic herbs and hints of iodine; a fresh and savory palate, refined and persistent.

Vegetarian dishes, cured meats and cheeses, baked fish.
