First fermentation in steel barrels without temperature control and without the use of selected yeasts. Aged in steel barrels, clarified by taking the barrels outdoors during the winter. In the month of March, with the increase in temperature, during the waxing moon phase, it is bottled with the addition of refrigerated grape must, in order to trigger the second fermentation in the bottle.
Straw yellow color with appetizing perlage; nose of citrus, white pulp fruit, wild flowers; fresh and mineral sip, with vibrant acidity.
