Description

Manual harvest between the end of August and the beginning of September; cold pressing with whole grapes and use of carbonic snow; batonnage sur lies in fermentation; secondary fermentation with the long Charmat method, starting from must, for 8 months at a controlled temperature of 15/18°C.

Tasting

Straw yellow color with persistent perlage; intense nose of flowers and fruits; enveloping, fresh and complex sip, of great intensity and persistence.

Aperitif, fresh cold cuts and cheeses, seafood appetizers, shellfish.
