Solaris is a variety obtained in 1975 in Germany at the Freiburg Institute by crossing different white varieties. VenticinqueDieci originates at about 980m asl, in the municipality of Romeno (TN), in the Alta Valle di Non. The calcareous-clayey, medium-deep soil is characterised by a low percentage of skeleton, but the slope of the terrain guarantees optimal water management. The first Solaris rootstocks were planted in spring 2016 with a planting densitỳ of over 7000 plants/ha to limit the load of grapes per vine and consequently maximise qualitỳ. Thè Solaris variety is usually characterised by an extremely early ripening period but, given the altitude at which it is grown here, it does not usually reach optimum ripeness until the second ten days of September. Harvesting, in September, is done strictly by hand and the grapes are transported in small plastic crates to preserve the integrity of the bunches as much as possible. After soft pneumatic pressing of the destemmed grapes, the must is left overnight to decant before being racked and selected yeasts are added. Fermentation in stainless steel barrels takes place at a controlled temperature and lasts approximately 10 days. Once fermentation is complete, the wine is racked off and remains until the end of spring to mature in stainless steel barrels before being filtered and bottled.
