Destemming and pressing of the grapes, followed by fermentation on the skins for about 4 weeks; after racking, the wine is placed in different 2000-liter barrels. Malolactic fermentation takes place naturally. In the following 3/4 years the wine continues its refinement on the yeasts with periodic batonnage. When it reaches a satisfactory maturation, the different barrels are transferred into a single steel container, where it will remain for at least 3 months, to favor its natural decantation; bottling follows without filtration.
Deep yellow color, with amber shades; delicate nose with notes of flowers, fruits and bread crust, hints of herbs, undergrowth and dried fruit; dry sip of great balance, long persistence, with returns of wild flowers and dried fruit.
Oysters, raw fish, cured meats and important cheeses.
