Description

Spontaneous fermentation on the skins in Tuscan terracotta amphorae for 1 month. Maturation on the fine lees for two years: the first in terracotta and the second in steel. It is bottled without filtration. Subsequent refinement in bottle for approximately 6 months.

Tasting

Complex and articulated Vernaccia, with floral, dried fruit, wheat, barley and peat tones. Rich, dense, characterful sip, with a pinch of tannins in relief in the center of the mouth, and a tasty, long finish of notable complexity. Possibility of aging up to approximately 10-12 years.

Pairings

Scampi, lobster, lobster, oysters, raw fish, smoked salmon, grilled fish and shellfish, fried seafood and lake fish, truffle-based dishes.
