Description

Rigorous manual selection of the bunches, soft pressing, obtaining a must that remains to decant naturally in the cold for 48 hours. The clear part starts fermentation, by indigenous yeasts, in steel tanks at a controlled temperature and with a minimum use of sulphites. The refinement continues for another 6 months in steel tanks, on the fine lees.
