Manual harvest in the first/second ten days of October; direct pressing of whole bunches with natural static decantation of the must for 30 hours; fermentation with pied de cuve of Native yeasts for 13/15 days in 2,000 liter wooden barrels, maturation in large 25hl barrels for 12 months with five rackings carried out. Bottle refinement. Racking and bottling according to the phases of the moon.
Golden straw yellow colour; nose of yellow pulp fruit, citrus and aromatic herbs; sip of great balance, between richness and freshness, savory, mineral, enveloping and persistent.
Seafood first courses, grilled fish, grilled white meats.
