Fermentation in steel tanks for 15–20 days, followed by frequent stirring on the fine lees. Malolactic fermentation occurs naturally and the wine ages in cement.

A bright, intense yellow color, it has stony and mineral aromas of grape skins, flowers, and forest floor. The palate is solid, chiseled, salty, and very deep.
Meat appetizers, seafood first courses, grilled fish, white meats, cured meats and cheeses.
