Vitovska Carso DOC 2023

Manual harvest with selection in the vineyard in the first ten days of September; the grapes are delicately destemmed and left to macerate with the skins for 24 hours, encouraging spontaneous fermentation; the wine matures on the fine lees, partly in wooden barrels and partly in stainless steel, until spring with initial batonnage every 4 days; it is then bottled in the waning moon without being filtered.

Intense straw yellow color with golden reflections; delicate and fine nose, with floral and mineral notes, hints of peach and pear in the finish; soft and savory sip, mineral, with a fresh and enveloping aftertaste.

Seafood appetizers, cured meats and cheeses, grilled white meats.
