Grillo and Catarratto are vinified separately, with long maceration on the skins (30 and 10 days respectively), then assembled and aged for 6 months in a cement tank. Once fermentation is complete, the wine is bottled with the addition of must to carry out the second fermentation.
Bright powder color; intense nose, pleasantly complex, with iodine and floral notes, of candied fruit and wild herbs; fresh and decisive sip, with silky tannins.
Crustaceans and molluscs, raw fish, fried seafood.
